The Post Coming to Boulder
Hi Fall Friends.
Just a simple non-confrontational note this time, not like the last few newsletters. No tales of stanky skunk weed in kitchens to infuriate a couple dispensary owner friends. No Trump comments. No theories or expanses on climate change. Not even a poke or two at some goofy folks who might need a poke or two. Cause at the end of the day, who am I to comment on any of these or other things?
Just all BRF love this time ahhh-round.
We are taking possession of the SHINE space at 2027 13th St. this week. This is particularly fun for me as I had Q’s Restaurant in the Hotel Boulderado for several years in the early 90’s and used to look down on La Estrellita which was here before Redfish Brewhouse – from the second floor kitchen in the hotel. The bad-ass Emich girls (formerly of Trilogy) are taking their SHINE over near ZOLO in the The Village Shopping Center. We will be opening The Post Brewing Company on Halloween night. All the hot chicken and cold beer you can handle. Gonna have an expanded menu in this POST, and we are actually doing a big menu makeover at all of The Post Brewing Company restaurants. Lots more stuff besides righteous chicken (voted best fried chicken in Westword, 5280 and Eater Denver) and delicious beer (multiple GABF medal winning and nationally recognized) including more salads, vegetarian dishes, more good meats and a whole elevated focus on lots of local farm produce prepared differently each night. Same great pies and biscuits. Lots more award winning beer. And bird. This bird is the word.
We’ll have a big, beautiful party room and the sweet Bea Glassford will be booking it out for the holiday parties, weddings & baby showers, Grandma’s 80th, and everything in-between. Nick Tedeschi will be brewing the beer at POST Boulder. Nick spent the last four years with founding brewmaster Bryan Selders at the O.G. POST Brewing Co. in Lafayette – learning, tasting, educating and mastering. We are really excited to see what young Nick is going to put in the tanks in this new brewery. Jimmy Giesler will be heading the kitchen. Chef Jimmy use to be at Black Cat with Eric Skokan and at Riff’s with John Platt – two of the most talented and hardest working chefs in the 303. Jimmy has been in the BRF Family for the last five years, most recently as the exec chef at The Post Lafayette. He brings pride and beaming passion around his love for cooking soulful food to this new location.
Matthew Glassford will be running the dining room. I could wax poetic about his resume and skill sets for days, but I will just ask y’all to come in. You’ll meet him. Whether you’re ready for it or not – ohhhhh, you’ll meet him. And have a new and forever friend who will welcome you home with your favorite beverage in hand each time you stop by. It’ll be his drink, in his hand, but it’ll be something you like. And he’ll get you one too!
Really looking forward to bringing The Post to downtown Boulder. And to all the most excellent autumn ingredients that will be featured on all of our upcoming menu changes at all of the restaurants. Fall is the best time of year. Anticipation of skiing – still gettin’ Indian summer days – big fish hittin’ big bugs in the rivers – it gets no better my friends.
